    Ingredients.The bear chip omelet

    1 goal

    3 eggs
    Salt
3 tbsp Boursino cheese + 1-2 tsp water
1 handful of potato chips, preferably sour cream and onions
    1 tablespoon finely chopped chives
    butter for frying

    1. Beat the eggs, add a little salt.

    2. Stir the Boursino cheese with a little water until smooth. It should be creamy but not runny. Feel free to fill up a liquor bag.

    3. Melt a good dollop of butter in a frying pan over medium heat. Tilt the frying pan so that melted butter comes out around the edges, which makes serving easier.

    4. Once the butter is hot and bubbling, add the egg mixture. Move the pan so that the dough spreads over the entire surface. Reduce the heat and fry until the omelette comes to a standstill but no longer has any color. Run a spatula around the edges of the omelet, shaking the pan a little from time to time to prevent the omelet from sticking.

    5. Remove the skillet from the heat. Sprinkle a string of Boursin in the center of the omelette and fold it gently. Roll or slide the omelette onto a plate. Top with coarsely chopped chips and finely chopped chives

Tip! To make the egg mixture even smoother, strain it through a wire sieve.
