Ingredients.Cauliflower gratin with fries
4 port as accessories
½ head of cauliflower
½ dl pesto for serving
Sauce:
2 tablespoons butter
2 tbsp wheat flour
2-3 dl milk
Salt
white pepper
½ teaspoon Dijon mustard
a pinch of finely grated nutmeg
75g Cheddar cheese, grated
1-2 dl coarsely chopped potato chips
1. Set the oven to 200 degrees. Divide the cauliflower into florets and cook in lightly salted water until barely soft, about 5-7 minutes. Drain the bouquets well and place them in an ovenproof dish.
2. Fry butter and flour in a saucepan until golden brown and fragrant. Gradually dilute with milk and mix well so that no lumps form. Add salt, pepper, Dijon mustard and a little nutmeg. Season to taste and cook until the sauce has thickened quite a bit, about 5 minutes (keep in mind that the cheese will make it even thicker).
3. Remove the pot from the heat. Stir in the cheese and pour the sauce over the cauliflower. Sprinkle the crushed chips on top. Gratinate until the cheese has melted and gained some surface area, about 10-15 minutes.
