    During the Winter Olympics in Italy, a particular pasta went viral after participants posted footage on social media. The pasta itself, modeled after the Olympic rings, was designed only to be served in the Olympic Village and cannot be purchased. Behind the pasta is star chef Carlo Cracco, who is responsible for all catering during the competitions. His unique pasta was served as “Pasta alla Crudaiola”, i.e. together with a tomato pesto made and flavored from, among other things, different types of fresh tomatoes, olives and olive oil colatura di alici, a kind of Italian fish sauce.

    It is unclear whether wine was served in the Olympic Village, but it is certain that one would have been offered a glass of local red wine in the other restaurants in the area. Both Cortina and Milan are surrounded by important wine regions.

    This dish probably goes best with a light and elegant red wine from one of the Alpine wine regions. We find these mainly in Trentino-Alto Adige, in the Aosta Valley and in Valtellina, but also in the area around Lake Garda. The cool climate and local grape varieties give the wines both drinkability and character. To get the perfect combination at home, if you don’t feel like making your own pasta rings, I recommend a short type of pasta like mezze maniche or rigatoni. The easiest way to make your own tomato sauce is to find good tomatoes!
