Ingredients.Marry Me Butter Bean Casserole.
3-4 servings, 25-30 mins
1 onion, chopped
2 cloves of garlic, minced
1 can sun-dried tomatoes with oil
1 teaspoon dried thyme
1 teaspoon dried oregano
½ teaspoon chili flakes
1 tbsp paprika powder
400 g butter beans (cooked or canned)
2 dl vegan cream
2 dl coconut milk
1 pot fresh basil
Salt and pepper
2 tablespoons olive oil for frying
1. Heat the olive oil in a large pot. Saute onion and garlic until soft and aromatic.
2. Add sun-dried tomatoes (including oil) and fry for 1-2 minutes.
3. Season with thyme, oregano, chili flakes and paprika powder. Stir well so that the spices develop their aroma.
4. Add butter beans, vegan cream and coconut milk. Simmer over medium heat for about 10-15 minutes so that the flavors meld and the stew becomes creamy.
5. Roughly chop the basil and stir in just before serving. Season with salt and pepper. Serve with rice, quinoa or freshly baked bread.
Tip! Garnish with extra fresh basil or toasted pine nuts for added texture and flavor.
